    • Cooking Oil – 3 Tbsp

    • Onion, Chopped – 1 Medium

    • Mustard Seeds / Rai – 1 Tsp

    • Cumin Seeds / Jeera – 1 Tsp

    • Garlic, Chopped – 1 Tbsp

    • Green Chilies, Chopped – 2

    • Pinch Of Asafetida

    • Tomatoes, Chopped – 1 Large

    • Turmeric Powder / Haldi – 1/2 Tsp

    • Red Chili Powder – 1 Tsp

    • Coriander Powder – 1 Tsp

    • Salt To Taste

    • Water – 2.5 Cup or as required

    • Sev – 1 Cup + 2 Tbsp For Garnishing

    • Garam Masala Powder – 1/2 Tsp or Less

    • Chopped Coriander Leaves – 2 Tbsp


Method:

1. Heat 3 Tbsp oil in a wok/kadhai on medium heat.

2. When the oil is hot, add mustard seeds, cumin seeds and let them crackle.

3. Once they crackle, add the finely chopped garlic, green chilies and sauté them till the garlic turn golden in color.

4. Add the chopped onions and sauté for 3-4 minutes or until they are translucent.

5. Add the chopped tomatoes and mix well.

6. Let them cook till they turn mushy.

7. Now add the turmeric powder, red chili powder, coriander powder, and salt.

8. Mix well and cook for 3-4 minutes.

9. After 3-4 minutes, add 2.5 cups of water. Mix well and let it boil for 5 minutes.

10. Turn the heat to low and add 1 cup sev.

11. Mix gently and let it boil for a minute. (You can turn off the heat at this point).

12. Add garam masala powder, coriander leaves and mix lightly.

13. Top with 2 Tbsp Sev and Garnish it with chopped coriander.

Serve hot Rajasthani Sev Tamatar Ki Sabzi with roti or paratha...
