Jhajhariya is a delicacy made of corn, milk, ghee and sugar garnished with raisins and nuts. Grated or coarsely ground fresh sweet corn is slowly roasted in ghee for few hours until it loses most of its moisture and assumes a dry granular form.

Cooking Time: 30 min

Ingredients:

Sweet corn – 1 cup ground 

Ghee – 2 tbsp 

Milk – 1 cup 

Cardamom – 2

Sugar – 1/2 cup  


For Garnishing: 

Saffron strands – some 

Slender almond bits – 1 tbsp 


Recipe:

1. Remove the external skin and the filaments of corn. 

2. Mesh the corns and keep aside. 

3. Heat ghee in an overwhelming base Pan and add the ground sweet corn bits. Cook over low fire and continue mixing ceaselessly for around 10 minutes. 

4. Presently include milk by mixing continuously. Keep cooking on low fire till the milk has evaporated.

5. Include sugar and blend well. Let the Jhajhariya cook until sugar is totally dissolved and the fluid has dissipated. Continue blending great and cook until it leaves the sides and meets up like a ball. It will take around 5-8 min. Move it in a serving bowl and serve hot by decorating with almond chips, pista and saffron strands. 

Serve warm...
